Ingredients
  

For the Stir Fry:
  • 1 pound large shrimp shelled and deveined
  • 3 cups broccoli florets fresh
  • 1 onion thinly sliced
  • 2 tablespoons olive oil
  • 1/4 cup low sodium soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon cornstarch
  • 1 tablespoon fresh ginger root grated
  • 4 cloves garlic finely minced
  • 1 teaspoon chili garlic sauce adjust to taste

Method
 

Instructions:
  1. Start by preparing all your ingredients. Shell and devein the shrimp if not done already. Rinse the broccoli florets and pat them dry. Slice the onion thinly, grate the ginger, and mince the garlic. This will make the cooking process quick and efficient.
  2. In a mixing bowl, whisk together the soy sauce, brown sugar, rice vinegar, cornstarch, grated ginger, and minced garlic. This sauce will create a delicious coating for your shrimp and broccoli. Set aside.
  3. Heat 1 tablespoon of olive oil in a wok or large skillet over medium-high heat. Once hot, add the shrimp and cook for 2-3 minutes, or until they turn pink and opaque. Remove the shrimp from the pan and set aside.
  4. In the same pan, add the remaining tablespoon of olive oil. Toss in the sliced onion and broccoli florets. Stir-fry for about 5-7 minutes until the broccoli is bright green and tender-crisp.
  5. Return the cooked shrimp to the pan with the vegetables. Pour the sauce over the shrimp and broccoli, stirring well to coat everything evenly. Cook for an additional 2-3 minutes, allowing the sauce to thicken and glaze the ingredients.
  6. If you like it spicy, add the chili garlic sauce to taste. Stir well and cook for another minute to incorporate the heat.
  7. Remove from heat and serve your Easy Broccoli and Shrimp Stir Fry hot over steamed rice or noodles. Enjoy the burst of flavors and textures in every bite!
