Preheat the oven to 400°F (200°C).
In a mixing bowl, combine the herb-seasoned bread crumbs, chicken broth (or water), and the can of petite diced tomatoes with their liquid; stir until evenly moistened and set aside.
Place the bite-sized chicken pieces in a 9 x 13-inch casserole dish. Sprinkle the garlic powder, black pepper, salt, and dried oregano over the chicken, then add 3/4 cup of the mozzarella and toss gently to coat evenly.
Spread the breadcrumb and tomato mixture evenly over the seasoned chicken. Sprinkle the remaining 1/4 cup mozzarella over the top.
Bake uncovered for 35 minutes, or until the chicken is cooked through and the topping is golden.
