  • 1 pound Velveeta cheese, diced
  • 10 ounces Rotel tomatoes, drained
  • ¼ cup milk adjust as needed
  • 1 ounce taco seasoning (1 packet)
  • ½ cup canned black beans, drained
  • 1 piece boneless, skinless chicken breast, cooked and shredded
  • to taste Green onions, thinly sliced, for garnish
  • 1 piece Roma tomato, diced, for garnish

Instructions

  • Step 1: Gather all your ingredients, ensuring the chicken is cooked and shredded.
  • Step 2: In a medium-sized saucepan over low heat, add the diced Velveeta cheese and ¼ cup of milk. Stir until melted smoothly.
  • Step 3: Add the drained Rotel tomatoes and taco seasoning into the melted cheese mixture. Stir to combine and let simmer for a couple of minutes.
  • Step 4: Gently fold in the shredded chicken and drained black beans. Cook on low heat for an additional 2-3 minutes until heated through.
  • Step 5: Transfer to a serving bowl or slow cooker. Garnish with green onions and diced Roma tomato.

Notes

For a spicier kick, add diced jalapeños or hot sauce. This dip can also be made in a slow cooker.
