Ingredients
  

For the Burgers:
  • 1 cup rolled oats (not quick-cooking)
  • 1/2 cup cooked chickpeas
  • 1/3 to 2/3 cup prepared classic hummus (homemade or store-bought)
  • 1/4 cup finely diced yellow onion
  • 2 tablespoons fresh chopped parsley (optional)
  • 2 teaspoons onion powder
  • 1/2 teaspoon ground cumin
  • 1/16 teaspoon ground red cayenne pepper
  • 1/2 teaspoon kosher salt
  • 1/8 teaspoon freshly ground black pepper
  • 2 tablespoons olive oil

  1. In a mixing bowl, take the cooked chickpeas and use a fork to mash them. You want a chunky consistency—don’t over-mash; some texture is a good thing!
  2. Add the rolled oats, hummus, diced onion, parsley (if using), onion powder, cumin, cayenne pepper, salt, and black pepper to the mashed chickpeas. Mix everything together until well combined. The mixture should be moist but firm enough to hold its shape.
  3. Using your hands, form the mixture into burger patties. You should be able to create about 4-6 patties depending on your desired size. Make sure they are compact to prevent them from falling apart while cooking.
  4. In a skillet, heat the olive oil over medium heat. Once hot, carefully place the formed patties in the skillet, leaving space between them.
  5. Cook the patties for about 4-5 minutes on each side, or until they are golden brown and crispy. You can gently press down on the patties with the spatula to ensure even cooking.
