  • 3 pieces eggs
  • 1 cup buttermilk or homemade buttermilk substitute mix 1 tablespoon vinegar or lemon juice with 1 cup milk
  • 1 tablespoon vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1.5 cups mashed bananas about 3 ripe bananas
  • 0.5 cup salted butter (1 stick)
  • 1 teaspoon salt
  • 1 teaspoon lemon juice
For the Frosting:
  • 0.5 cup mashed ripe banana
  • 3 cups powdered sugar
  • 0.33 cup cocoa powder
  • 1 teaspoon espresso powder (optional)
  • 2-3 tablespoons heavy cream or whole milk for creamy consistency

  1. Step 1: Preheat the Oven - Start by preheating your oven to 350°F (175°C).
  2. Step 2: Prepare the Baking Pan - Grease your 9x13 inch baking pan with butter or non-stick spray.
  3. Step 3: Combine Dry Ingredients - In a large mixing bowl, combine the chocolate cake mix, cinnamon, and salt. Whisk until well mixed.
  4. Step 4: Mix Wet Ingredients - In another bowl, whisk together the buttermilk, eggs, vegetable oil, vanilla extract, mashed bananas, and lemon juice.
  5. Step 5: Combine Wet and Dry Ingredients - Pour the wet ingredients into the dry ingredients. Use an electric mixer to blend until just combined.
  6. Step 6: Bake the Cake - Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick comes out clean.
  7. Step 7: Cool the Cake - Remove the cake from the oven and let it cool for about 10 minutes, then transfer to a cooling rack.
  8. Step 8: Make the Frosting - Beat the softened butter until creamy, then add mashed banana, cocoa powder, powdered sugar, and espresso powder. Mix until smooth.
