Easy Granola Recipe

Simple homemade granola with rolled oats, sliced almonds, flaked coconut, maple syrup, and canola oil. Crisp-bakes in the oven and stores well in an airtight container.

  • 3 crolled oats regular or gluten free
  • 1 cupsliced almonds
  • 1 1/2 cupflaked coconut
  • 1/3 cupmaple syrup
  • 2 Tbrown sugar
  • 1/3 cupplus 1 T canola oil
  • 1 Tvanilla extract
  • 1 Tcinnamon
  • 1/2 tspSea Salt

  • Parchment Paper
  • Spoon or spatula

Method
 

Instructions
  1. Preheat oven to 300°F (150°C). Line a large rimmed baking sheet with parchment paper.
  2. In a large bowl, combine the 3 cups rolled oats, 1 cup sliced almonds, 1 ½ cups flaked coconut, 2 Tb brown sugar, 1 T cinnamon, and ½ tsp sea salt. Stir to mix the dry ingredients evenly.
  3. In a smaller bowl or measuring cup, whisk together the ⅓ cup plus 1 T canola oil, ⅓ cup maple syrup, and 1 T vanilla extract until smooth.
  4. Pour the wet mixture over the dry ingredients and stir thoroughly until all the oats, almonds, and coconut are evenly coated.
  5. Spread the mixture in an even, single layer on the prepared baking sheet.
  6. Bake 25–30 minutes, stirring once halfway through (about 12–15 minutes) and rotating the pan if needed, until the granola is golden and fragrant.
  7. Remove the baking sheet from the oven and let the granola cool completely on the sheet; it will crisp as it cools.
  8. Once cool, break into clusters as desired and store in an airtight container.

Notes

If you like your granola extra crunchy, you can add an egg white to the mix. That will bring the crunch to the mix.
If you prefer your granola in big chunks and clusters, use 1 1/2 c rolled oats and 1 1/2 c quick oats. This will hold together in chunks a bit better versus using 3 cups of rolled oats.
Do not touch the granola until it is fully cooled. (Easier said than done, right? Just don’t dump the whole thing. You can nibble a corner.) This will also allow for more clusters and chunks.
Granola is done when the liquid has dried and it is golden brown. If you are not sure if yours is ready, these are the best things to look for.
