Method
 

  1. Preheat your oven to 400°F (200°C). This ensures that your shrimp and veggies roast perfectly.
  2. In a mixing bowl, combine the raw shrimp, broccoli florets, cubed zucchini, sliced onion, bell pepper, and thinly sliced carrot.
  3. Drizzle the olive oil over the shrimp and vegetable mixture. Add the salt, Italian seasoning, paprika, and black pepper. Toss everything together until the shrimp and veggies are well-coated in the oil and seasonings.
  4. Spread the seasoned shrimp and veggies in a single layer on a large baking sheet. Make sure they are evenly distributed for uniform cooking.
  5. Place the baking sheet in the preheated oven and roast for 15-20 minutes. The shrimp should turn pink and opaque, and the veggies should be tender and slightly caramelized.
