Ingredients
  

  • 4 filets Cod about 1" thick
  • 1 tablespoon Extra virgin olive oil
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Lemon zest
  • 2 tablespoons Lemon juice
  • 2 cloves Garlic finely minced
  • 1 teaspoon Paprika
  • 1 teaspoon Kosher salt
  • 1 tablespoon Unsalted butter optional, cut into small pieces
  • to taste Fresh parsley for garnish

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine olive oil, Dijon mustard, lemon zest, lemon juice, garlic, paprika, and kosher salt. Whisk until well blended.
  3. Place the cod filets on the baking sheet and coat each filet with the marinade.
  4. If using, place a dot of butter on top of each cod filet.
  5. Bake for 12-15 minutes or until the cod is opaque and flakes easily with a fork.
  6. Let the cod rest for a minute, then serve with lemon wedges and parsley.

  • Check for doneness at the 12-minute mark to avoid overcooking.
  • Don’t skip the marinade; it’s key to flavor.
  • Ensure frozen cod is fully thawed before cooking for even results.
