Start by gathering all your ingredients. Slice your bagel in half, the onions into thin strips, and the jalapeño into rounds. If you prefer a milder flavor, feel free to remove the seeds from the jalapeño.
In a non-stick skillet, heat the teaspoon of oil over medium heat. Add the sliced onions and jalapeño. Sauté for about 3-4 minutes or until the onions become translucent and slightly caramelized. Stir occasionally to prevent burning.
Once the onions and jalapeño are sautéed to perfection, push them to one side of the skillet. Crack the egg into the skillet and cook it sunny-side up or to your desired doneness. If you prefer a firmer yolk, you can cover the skillet with a lid while it cooks.
While the egg is cooking, pop your bagel halves into the toaster or toaster oven until they are golden brown and crispy.
Once the egg is cooked, place your pastrami slices on top of the egg in the skillet. Lay the slice of pepper jack cheese over the pastrami. Allow it to melt slightly for about 1 minute.
On the bottom half of the toasted bagel, layer the sautéed onions and jalapeño. Then, carefully place the egg, pastrami, and melted cheese on top. Finish with the other half of the bagel.
Slice your bagel sandwich in half for easy handling and dive into this delicious breakfast creation. Pair it with a side of fresh fruit or a cup of coffee for the ultimate breakfast experience.
