In a large skillet, melt the coconut oil over medium heat. Make sure it’s fully melted but not sizzling.
Once the coconut oil is melted, add the rolled oats, honey, and salt to the skillet. Stir well to coat the oats evenly.
Stir in the chopped pecans and, if using, the shredded coconut. Mix everything together until well combined.
Continue to cook the mixture over medium heat, stirring frequently for about 5 to 7 minutes until the oats and nuts are golden brown. Watch carefully to prevent burning!
Once the granola is toasted to your liking, remove it from the heat and let it cool in the skillet. As it cools, it will crisp up. Once completely cooled, transfer it to a storage jar.
