Ingredients
  

  • 1 cup pitted dates soaked if not soft
  • 1/2 cup pepitas pumpkin seeds
  • 1/2 cup rolled oats wholesome base
  • 2 tablespoons tahini creamy texture
  • 1 tablespoon pure maple syrup extra sweetness
  • 1/4 teaspoon sea salt to balance sweetness
  • 1 teaspoon cinnamon for flavor
  • 1/4 cup shredded coconut for texture

Method
 

  1. Start by soaking the pitted dates in warm water for about 10 minutes if they are not soft.
  2. In a food processor, combine the soaked dates, pepitas, rolled oats, tahini, maple syrup, sea salt, and cinnamon. Pulse until the mixture is well combined and starts to form a sticky dough.
  3. Transfer the mixture to a mixing bowl and stir in the shredded coconut until evenly distributed.
  4. Using your hands or a cookie scoop, form the mixture into small balls, about 1 inch in diameter.
  5. Place the rolled bliss balls on a parchment-lined plate or container and refrigerate for at least 30 minutes to firm up.

Notes

  • Store in an airtight container in the refrigerator for up to one week.
  • For longer storage, freeze the bliss balls for up to 3 months.
  • Experiment with different nut butters or add-ins for variety!
