Ingredients
  

  • 1 cup unsalted butter (room temperature)
  • 1 cup white granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large egg whites
  • 3 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 20 pieces caramels (unwrapped)
  • 1 tablespoon heavy cream
  • 1.5 cups milk chocolate chips or Ghirardelli milk chocolate baking bar

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: In a mixing bowl, combine the butter and sugar. Beat until light and fluffy, about 2-3 minutes.
  3. Step 3: Add the egg whites and vanilla extract. Beat until well combined.
  4. Step 4: In a separate bowl, whisk together the flour and baking powder. Gradually add to the wet mixture, mixing until just combined.
  5. Step 5: In a microwave-safe bowl, combine the caramels and heavy cream. Microwave until smooth.
  6. Step 6: Scoop about a tablespoon of dough, flatten it, and place a teaspoon of melted caramel in the center. Enclose the caramel with the dough.
  7. Step 7: Place the cookies on a lined baking sheet, spacing them apart. Bake for 10-12 minutes until the edges are golden brown.
  8. Step 8: Melt the chocolate in a microwave-safe bowl until smooth.
  9. Step 9: Drizzle melted chocolate over the cooled cookies.
  10. Step 10: Allow the cookies to cool completely on a wire rack.

Notes

  • Substitute coconut oil for butter for a dairy-free version.
  • Use whole wheat flour for added fiber.
  • Reduce sugar by ¼ cup for a less sweet cookie.
