Ingredients
  

For the Hummus:
  • 1.5 cups edamame cooked and shelled
  • 2 tbsp tahini paste
  • 1/4 cup water
  • 1 tsp lemon zest
  • 1 whole lemon juiced
  • 1 clove garlic crushed
  • to taste kosher salt
  • to taste pepper
  • 2 tsp olive oil for drizzling
  • to taste black and white sesame seeds optional garnish

Method
 

Instructions:
  1. Step 1: Prepare the Edamame - Begin by cooking your edamame. You can steam them or boil them in salted water for about 5 minutes until tender. Drain and let cool slightly before proceeding.
  2. Step 2: Blend the Ingredients - In a food processor, combine the cooked edamame, tahini paste, lemon zest, lemon juice, crushed garlic, and salt. Pulse until the ingredients are roughly combined.
  3. Step 3: Add Water - With the processor running, slowly add in the 1/4 cup of water. Continue to blend until you reach a creamy consistency. If the hummus is too thick, add more water a tablespoon at a time until it’s just right.
  4. Step 4: Season to Taste - Taste your hummus and adjust the seasoning with additional salt and pepper as needed. This is your chance to make it perfect for your palate!
  5. Step 5: Serve and Garnish - Transfer the hummus to a serving bowl. Drizzle with olive oil and sprinkle with black and white sesame seeds if desired.

Notes

  • Store in an airtight container in the refrigerator for up to a week.
  • Freeze for up to three months in a freezer-safe container.
  • Thaw overnight in the fridge before serving; add water to restore creaminess if needed.
