Ingredients
  

For the Burritos:
  • 12 large eggs
  • 1 unit red bell pepper chopped into 1/2 inch pieces
  • 1 unit green bell pepper chopped into 1/2 inch pieces
  • 1 can diced green chiles (4 oz.)
  • 1 tablespoon olive oil
  • 2 teaspoons Spike seasoning
  • 10 unit Mission Carb Balance low-carb tortillas
  • 2 cups grated cheese Cheddar or a blend

Cooking Instructions
  1. Step 1: Prepare the Ingredients. Start by chopping the red and green bell peppers into 1/2 inch pieces. Drain the can of diced green chiles. Set all these ingredients aside.
  2. Step 2: Whisk the Eggs. In a large mixing bowl, crack all 12 eggs and whisk them until well combined. Set aside.
  3. Step 3: Sauté the Vegetables. Heat the olive oil in a large skillet over medium heat. Add the chopped bell peppers and sauté for about 5 minutes, or until they are tender. Stir in the diced green chiles and cook for an additional minute.
  4. Step 4: Add the Eggs. Pour the whisked eggs into the skillet with the sautéed vegetables. Sprinkle in the Spike seasoning. Using a spatula, gently stir the mixture, allowing the eggs to cook slowly and evenly. Cook until the eggs are just set, about 5-7 minutes.
  5. Step 5: Assemble the Burritos. Warm the tortillas slightly in a tortilla warmer or microwave to make them pliable. Lay a tortilla flat and spoon a generous portion of the egg and veggie mixture onto the center. Top with a handful of grated cheese.
  6. Step 6: Roll Up the Burritos. Fold in the sides of the tortilla and roll it up tightly from the bottom. Repeat this process with the remaining tortillas and filling.
  7. Step 7: Serve or Keep Warm. If serving immediately, place the burritos on a platter. If preparing in advance, wrap them in foil and keep them in a warm oven until ready to serve.
