Ingredients

  • 1.5 pounds Flat Iron Steak well-marbled
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon black pepper freshly cracked
  • 1 teaspoon salt
  • 2 cloves garlic minced or crushed

Equipment

  • Grill or grill pan
  • Meat Thermometer
  • Cutting Board
  • Sharp Knife

Method

  1. Begin by combining the olive oil, smoked paprika, black pepper, salt, and minced garlic in a bowl. Mix well to create a marinade. Rub this mixture all over the Flat Iron Steak, ensuring it’s evenly coated. Allow the steak to marinate for at least 30 minutes, or up to overnight in the refrigerator for deeper flavor.
  2. If you are using an outdoor grill, preheat it to high heat. For a grill pan, place it over medium-high heat on the stove. Allow it to get hot enough that water sizzles upon contact.
  3. Place the marinated Flat Iron Steak on the grill or grill pan. Cook for about 4-5 minutes on each side for medium-rare, or until it reaches your desired doneness. Use a meat thermometer to check the internal temperature—130°F for medium-rare, 140°F for medium.
  4. Once cooked, remove the steak from the heat and let it rest on a cutting board for at least 5-10 minutes. This allows the juices to redistribute, ensuring a juicy steak when sliced.
  5. Slice the steak against the grain into thin strips. Serve it as is, or with your favorite sides. This steak pairs wonderfully with salads, roasted vegetables, or even in tacos.

Notes

  • Let the steak come to room temperature before cooking for more even cooking.
  • Don’t skip the resting step; it’s crucial for tenderness.
  • Experiment with different seasonings like cumin or chili powder for a flavor twist.
  • For extra richness, finish the steak with a pat of herb butter right before serving.
