Method
- Step 1: Cook the Sausage - Heat a large skillet over medium heat. Add the maple breakfast sausage links and cook until browned and cooked through. Remove and slice into bite-sized pieces.
- Step 2: Sauté the Vegetables - In the same skillet, add 1 tablespoon of canola oil. Sauté the diced red and green bell peppers and onion, seasoning with salt and pepper, for 5-7 minutes until tender.
- Step 3: Whisk the Eggs - In a large mixing bowl, crack the eggs and whisk until blended. Season with salt and pepper.
- Step 4: Scramble the Eggs - Push the vegetables to one side of the skillet, add remaining canola oil if needed, and pour in the eggs. Scramble until fully set.
- Step 5: Combine Everything - Add the sliced sausage to the skillet with the eggs and vegetables. Stir in the cheddar cheese until melted.
- Step 6: Assemble the Burritos - Lay a tortilla flat, spoon 1/2 cup of filling onto the center, fold in the sides, and roll tightly. Repeat with remaining tortillas.
- Step 7: Freeze the Burritos - Wrap each burrito tightly in plastic wrap or foil, place in a freezer-safe bag, and label with the date. Store in the freezer for up to three months.
Notes
Let the filling cool before wrapping to prevent sogginess. Customize with your favorite spices, herbs, or additional ingredients.
