In a mixing bowl, combine 1 cup of Birch Benders Protein pancake mix, 6 tablespoons of water, and 1/2 teaspoon of vanilla extract. Whisk until you achieve a smooth and thick batter.
In a frying pan or deep fryer, heat enough oil to cover the Oreos halfway to about 350°F (175°C).
Take each Oreo cookie thin and dip it into the batter, allowing excess batter to drip off before frying.
Carefully place the coated Oreos into the hot oil; fry for about 2-3 minutes on each side or until golden brown.
Using a slotted spoon or tongs, remove the fried Oreos from the oil and place them on a plate lined with paper towels to drain excess oil. Dust with confectioners' sugar while still warm.
