No-bake fudge cookies made with healthy Nutella, maple syrup, coconut flour, and chocolate chips; chilled and dipped in melted chocolate.

Method
 

Instructions
  1. Line a large plate or tray with parchment paper and set aside.
  2. In a large mixing bowl, combine 2 cups healthy Nutella, 1/2 cup maple syrup, and 3/4 cup coconut flour. Stir until the mixture is smooth and holds together as a thick, moldable batter. If the batter is too dry or crumbly, add a little more maple syrup, a small amount at a time, until the dough is moist and sticks together (do not add any ingredients not listed).
  3. Using clean hands, scoop and roll the dough into small balls (about 1 inch / bite-sized or your preferred size). Place the balls on the lined tray, leaving a little space between each.
  4. Press each ball gently with your palm or the bottom of a glass to flatten into a small cookie shape.
  5. Transfer the tray to the freezer and chill until the cookies are firm, about 15–30 minutes.
  6. While the cookies chill, melt 2 cups chocolate chips in a heatproof bowl. Microwave method: heat in 20–30 second bursts, stirring between each burst, until smooth. Double-boiler method: set a heatproof bowl over simmering water and stir the chips until melted and smooth. Use whichever method you prefer.
  7. Remove the cookies from the freezer. Working one at a time, use two forks to lower a cookie into the melted chocolate, fully coat it, lift it out, and let excess chocolate drip back into the bowl. Place the coated cookie back on the parchment.
  8. When all cookies are coated, refrigerate the tray until the chocolate coating is set, about 20–30 minutes.
  9. Once set, the cookies are ready to serve. Store any leftovers refrigerated.

Notes
TO STORE:
Cookies can be stored at room temperature, provided the chocolate coating is firm. They will stay fresh in an airtight container for up to 2 weeks. If the chocolate coating is thin, it’s best to store them in the fridge.
TO FREEZE:
Leftover no-bake chocolate cookies can be stored in a freezer bag and kept frozen for up to 6 months.
