In a food processor, add the garbanzo beans, sautéed onion and garlic, egg, grated gruyere cheese, chopped parsley, and season with salt and pepper. Pulse until you reach a chunky yet cohesive mixture.
Using your hands, form the garbanzo bean mixture into small patties or balls, about the size of a golf ball. Roll each croquette in breadcrumbs for a nice crispy coating.
In the same frying pan, heat 2 tablespoons of olive oil over medium-high heat. Once the oil is hot, carefully add the croquettes to the pan, making sure not to overcrowd them. Fry for about 3-4 minutes on each side, or until they are golden brown and crispy.
In a small bowl, whisk together the tahini sauce, hot water, olive oil, lemon juice, minced garlic, and a pinch of salt and pepper until smooth. Adjust the consistency by adding more water if needed.
