Garbanzo Beans Croquettes with Tahini Sauce

Ingredients
  

  • 16 ounces garbanzo beans (canned or cooked)
  • 1 cup yellow onion (finely chopped)
  • 1 egg
  • 1 cup gruyere cheese (grated)
  • 4 tablespoons parsley (chopped)
  • 1 clove garlic (minced)
  • 1 tablespoon olive oil
  • 1 cup breadcrumbs
  • 2 tablespoons olive oil (for frying)
  • Salt and pepper (to taste)
  • 2 tablespoons Italian parsley (finely chopped, for garnish)
  • 2 tablespoons tahini sauce
  • 2 tablespoons hot water
  • 1 tablespoon olive oil (for tahini sauce)
  • 1 tablespoon lemon juice
  • 1 clove garlic (minced for tahini sauce)
  • Salt and pepper (to taste for tahini sauce)

Method
 

  1. Start by rinsing and draining the canned garbanzo beans if you’re using them. If you’re using dried beans, make sure to cook them according to package instructions until they are tender.
  2. In a frying pan, heat 1 tablespoon of olive oil over medium heat. Add the finely chopped yellow onion and sauté until it becomes translucent, about 5 minutes. Then, add the minced garlic and cook for an additional minute until fragrant.
  3. In a food processor, add the garbanzo beans, sautéed onion and garlic, egg, grated gruyere cheese, chopped parsley, and season with salt and pepper. Pulse until you reach a chunky yet cohesive mixture.
  4. Using your hands, form the garbanzo bean mixture into small patties or balls, about the size of a golf ball. Roll each croquette in breadcrumbs for a nice crispy coating.
  5. In the same frying pan, heat 2 tablespoons of olive oil over medium-high heat. Once the oil is hot, carefully add the croquettes to the pan, making sure not to overcrowd them. Fry for about 3-4 minutes on each side, or until they are golden brown and crispy.
  6. In a small bowl, whisk together the tahini sauce, hot water, olive oil, lemon juice, minced garlic, and a pinch of salt and pepper until smooth. Adjust the consistency by adding more water if needed.
  7. Plate the crispy croquettes, drizzle with tahini sauce, and garnish with finely chopped Italian parsley. Enjoy your Garbanzo Beans Croquettes with Tahini Sauce hot or warm!

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
