Drizzle the extra virgin olive oil over the olive mixture and ensure everything is well-coated.
Sprinkle in the fresh thyme, oregano, and chili flakes. Add a pinch of black pepper to taste and toss everything together.
Spread the seasoned olives mixture evenly on a sheet pan and roast for about 20-25 minutes, until slightly blistered and aromatic.
Let the burrata cheese come to room temperature while the olives are roasting.
Once roasted, transfer the olives and garlic to a serving platter, placing the burrata cheese in the center. Drizzle honey over the burrata and sprinkle fresh herbs for garnish.
Serve warm or at room temperature, paired with crusty bread or crackers.
