Ingredients
  

  • 2 cups mixed olives pitted
  • 1/3 cup extra virgin olive oil
  • 6 cloves garlic smashed
  • 1 shallot quarter
  • 1 lemon quartered
  • 2 sprigs fresh thyme
  • 2 sprigs fresh oregano
  • Chili flakes (to taste)
  • 3-4 balls burrata cheese at room temperature
  • 2-3 tablespoons honey
  • Black pepper (to taste)
  • Fresh basil and/or dill for serving

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine the mixed olives, smashed garlic cloves, quartered shallot, and lemon wedges.
  3. Drizzle the extra virgin olive oil over the olive mixture and ensure everything is well-coated.
  4. Sprinkle in the fresh thyme, oregano, and chili flakes. Add a pinch of black pepper to taste and toss everything together.
  5. Spread the seasoned olives mixture evenly on a sheet pan and roast for about 20-25 minutes, until slightly blistered and aromatic.
  6. Let the burrata cheese come to room temperature while the olives are roasting.
  7. Once roasted, transfer the olives and garlic to a serving platter, placing the burrata cheese in the center. Drizzle honey over the burrata and sprinkle fresh herbs for garnish.
  8. Serve warm or at room temperature, paired with crusty bread or crackers.

Notes

  • Feel free to use different varieties of olives for added flavor.
  • Honey adds a wonderful contrast; don't skip it!
  • Leftovers can be stored in an airtight container for up to a week.
