- Preheat oven to 450°F. Spray a baking sheet with non-stick cooking spray and set aside.
- Place 2 pounds yellow baby potatoes in a large pot, cover with water, and bring to a boil. Cook 10–15 minutes, until a fork easily pierces the potatoes. Drain well.
- Arrange the potatoes in a single even layer on the prepared baking sheet.
- Carefully smash each potato with a potato masher so each is flattened but still holds together.
- In a small bowl, whisk together ½ cup melted butter, 3 minced garlic cloves, and 2 tablespoons Hidden Valley® Original Ranch Seasoning & Salad Dressing Mix.
- Spoon or drizzle the butter mixture evenly over the smashed potatoes, spreading it into crevices as needed.
- Bake 15–20 minutes, until the potatoes are golden brown and crispy at the edges.
- Remove from the oven, sprinkle with chopped parsley for garnish, and serve.
