Garlic Shrimp Stir-Fry

Ingredients
  

For the Sauce:
  • 1 cup lite soy sauce
  • 1 cup water
  • 3 tablespoons light brown sugar packed (or to taste)
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon chili sauce or more to taste for more spiciness
  • 1 tablespoon cornstarch
For the Stir-Fry:
  • 3 tablespoons oil (peanut, vegetable, or olive oil)
  • 6 cloves garlic peeled and very finely minced
  • 1 fresh red bell pepper seeded and thinly sliced vertically
  • 1.5 cups raw broccoli florets do not use frozen
  • 1 cup fresh snow peas
  • 1 small baby bok choy sliced vertically into quarters
  • 2 pounds large raw shrimp with tails on, peeled and deveined
  • Sesame seeds, green onions, cilantro, etc. optional for garnishing

Equipment

Method
 

Preparation:
  1. In a small bowl, whisk together the lite soy sauce, water, light brown sugar, toasted sesame oil, chili sauce, and cornstarch until well combined. Set this sauce aside as we’ll use it to flavor our stir-fry.
  2. In a large wok or skillet, heat the 3 tablespoons of oil over medium-high heat. Once the oil is hot and shimmering, it’s time to add in the garlic.
  3. Add the minced garlic to the hot oil and sauté for about 30 seconds, or until fragrant. Be careful not to burn the garlic, as it can turn bitter.
  4. Immediately add the peeled and deveined shrimp to the pan. Stir-fry for about 2-3 minutes, or until the shrimp turn pink and opaque. Remove the shrimp from the pan and set aside.
  5. In the same pan, add the sliced red bell pepper, broccoli florets, snow peas, and bok choy. Stir-fry the vegetables for about 3-4 minutes until they are tender-crisp.
  6. Return the cooked shrimp to the pan with the vegetables. Pour the prepared sauce over the shrimp and vegetables. Stir well to coat everything in the sauce.
  7. Continue to stir-fry for an additional 1-2 minutes, allowing the sauce to thicken and coat the shrimp and vegetables beautifully.
  8. Remove the stir-fry from heat and serve immediately. Garnish with sesame seeds, chopped green onions, or cilantro if desired. Enjoy your Garlic Shrimp Stir-Fry over steamed rice or noodles for a complete meal!

Notes

  • For the best flavor, use fresh, high-quality shrimp. Look for shrimp that are firm and have a slight ocean scent.
  • Be sure to prep all your ingredients before you start cooking, as stir-frying goes quickly!
  • If you prefer a thicker sauce, increase the amount of cornstarch slightly.
  • Feel free to add other vegetables like carrots, snap peas, or mushrooms based on your preferences and what you have available.
