Rinse the salmon and pat dry with paper towels.
Add the chopped ginger and garlic to the salmon and rub gently to distribute them over the fish.
In a small bowl, combine soy sauce, oyster sauce, honey, sesame oil, white pepper, and salt; stir until blended.
Pour the sauce over the salmon and stir or massage to coat the pieces evenly with the marinade.
Cover and refrigerate to marinate for at least 30 minutes, or up to 2 hours for best flavor.
Preheat the oven to 375°F (190°C). Line a baking sheet with greased aluminum foil.
Place the marinated salmon pieces on the prepared baking sheet and bake in the center of the oven for 15 minutes, or until the surface is lightly browned or slightly charred and the fish is cooked through.
If any ginger or garlic are burned on the surface, scrape them off before serving; serve warm.
