Ingredients
  

  • 4 cups old-fashioned rolled oats ensure certified gluten-free
  • 1 cup raw nuts of choice like pecans and almonds
  • 2 tablespoons flaxseed meal for omega-3 fatty acids
  • 1/2 teaspoon kosher salt to enhance flavors
  • 1 teaspoon ground cinnamon for warmth
  • 1 teaspoon ground pumpkin pie spice optional
  • 1/2 cup pure maple syrup or honey for natural sweetness
  • 1/4 cup melted coconut oil or light olive oil for rich texture
  • 1 large egg white whisked until frothy
  • 1 teaspoon vanilla extract for added aroma
  • 1/2 cup unsweetened coconut flakes or additional nuts
  • 1/2 cup dried fruit optional, like chopped cranberries
  • 1/2 cup chocolate chips optional for sweetness

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C) for even baking.
  2. Step 2: In a large mixing bowl, combine rolled oats, raw nuts, flaxseed meal, kosher salt, ground cinnamon, and pumpkin pie spice (if using). Stir well.
  3. Step 3: In a separate bowl, whisk together pure maple syrup (or honey), melted coconut oil (or olive oil), whisked egg white, and vanilla extract until blended.
  4. Step 4: Pour the wet mixture over the dry ingredients and fold gently until coated.
  5. Step 5: Stir in the coconut flakes, dried fruit, and chocolate chips if using. Mix until well incorporated.
  6. Step 6: Spread the mixture evenly onto a lined baking sheet, pressing down slightly to create clumps.
  7. Step 7: Bake for 20-25 minutes, stirring halfway through, until golden brown and fragrant.
  8. Step 8: Allow to cool completely on the baking sheet, then break into clusters and transfer to an airtight container.

Notes

  • Experiment with spices like nutmeg or cocoa powder for variety.
  • For clumpier granola, press the mixture down firmly before baking.
