Goats Cheese and Smoked Salmon English Muffin

A quick, elegant open-faced sandwich of toasted English muffin topped with goats cheese, smoked salmon and peppery rocket.

Ingredients
  

  • 2 oz smoked salmon 2 slices, halved
  • 2 tablespoons goats cheese
  • 1 teaspoon garlic olive oil divided
  • 1 English muffin halved and toasted
  • 1 handful fresh rocket (arugula)

Equipment

  • toaster or grill
  • Knife
  • Spoon

Method
 

  1. Split the English muffin and toast the halves until golden.
  2. Spread the goats cheese evenly over the toasted muffin halves using a spoon or knife.
  3. Arrange the smoked salmon (slices halved) on top of the goats cheese.
  4. Tuck a handful of fresh rocket (arugula) over the salmon.
  5. Drizzle the garlic olive oil over the assembled muffin and serve immediately.

Notes

  • If desired, spread avocado or cream cheese with dill for extra creaminess.
