Ingredients
  

  • 2 boneless skinless chicken breasts cooked and shredded
  • 1 Granny Smith apple diced small
  • 2 tablespoons red onion minced
  • 1 tablespoon lemon juice
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons clean eating mayonnaise
  • 1 cup pecans lightly toasted, roughly chopped if desired
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground cumin

Method
 

  1. Place the shredded chicken in a large mixing bowl.
  2. Add the diced Granny Smith apple, minced red onion, and toasted pecans to the bowl.
  3. In a small bowl, whisk together the Greek yogurt, mayonnaise, lemon juice, kosher salt, and ground cumin until smooth.
  4. Pour the dressing over the chicken mixture and stir until everything is evenly coated.
  5. Cover and refrigerate for about 15 minutes to allow the flavors to meld, then serve.

  • Toast pecans briefly in a dry skillet for more flavor.
