Ingredients

Tortillas

  • 4 pieces burrito-sized flour tortillas

Fillings

  • 1 cup cooked ham, finely diced
  • 8 ounces pineapple tidbits, drained
  • ΒΌ cup green bell pepper, seeded and finely chopped
  • 1 cup mozzarella cheese, shredded

Dipping Sauce

  • to taste pizza sauce for dipping

Instructions

  • Step 1: Prepare the Ingredients - Finely dice the cooked ham, drain the pineapple tidbits, and chop the green bell pepper. Shred the mozzarella cheese and have everything ready.
  • Step 2: Assemble the Quesadillas - Lay one flour tortilla flat on a clean surface. On one half, sprinkle a generous layer of mozzarella cheese.
  • Step 3: Layer the Fillings - Add a portion of the diced ham, followed by the pineapple tidbits and chopped green bell pepper. Top with another layer of mozzarella cheese.
  • Step 4: Fold and Cook - Fold the tortilla in half to create a half-moon shape. In a non-stick skillet over medium heat, cook the quesadilla for about 3-4 minutes until golden brown.
  • Step 5: Flip and Finish Cooking - Carefully flip the quesadilla and cook for an additional 3-4 minutes until the cheese melts and the tortilla is crispy.
  • Step 6: Slice and Serve - Remove the quesadilla from the pan, let it cool for a minute, then slice into wedges. Serve warm with pizza sauce for dipping.

Notes

For extra crispiness, lightly brush the tortillas with olive oil before cooking. You can also customize the fillings with different meats or veggies.
