Ingredients
  

  • 1 cup whole pitted dried dates
  • 3 medium ripe bananas approximately 1 cup mashed
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 2 cups rolled oats (quick or old-fashioned) + more as needed

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C) for even baking.
  2. Step 2: If using whole dried dates, process them in a food processor until they form a sticky paste.
  3. Step 3: In a large mixing bowl, mash the ripe bananas until smooth.
  4. Step 4: Add the date paste, applesauce, cinnamon, and vanilla to the mashed bananas. Mix until well combined.
  5. Step 5: Gradually stir in the rolled oats, adding more if the mixture is too wet.
  6. Step 6: Drop spoonfuls of the mixture onto a lined baking sheet, flattening slightly.
  7. Step 7: Bake for 15-20 minutes until edges are golden and centers are set.
  8. Step 8: Let cool on the baking sheet before transferring to a wire rack.

Notes

  • Feel free to add dark chocolate chips or nuts for extra flavor.
  • Experiment with spices like nutmeg or ginger for a unique twist.
