Healthy Chicken Salad Recipe

A light, protein-packed chicken salad with crunchy celery and sweet grapes, tossed in a tangy Greek yogurt dressing.

Ingredients
  

  • 3 cups cooked chicken, shredded
  • 1 cup celery, diced
  • 1 cup red grapes, halved
  • 2 scallions scallions, sliced
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. In a large mixing bowl, combine the shredded cooked chicken, diced celery, halved grapes, and sliced scallions.
  2. In a small bowl, whisk together the plain Greek yogurt, Dijon mustard, lemon juice, salt, and black pepper until smooth.
  3. Pour the dressing over the chicken mixture and toss gently until all ingredients are evenly coated.
  4. Adjust seasoning to taste, then cover and chill the salad in the refrigerator for at least 2 hours before serving.

Notes

  • Use shredded rotisserie chicken for convenience.
  • Halve grapes to prevent bursting and balance texture.
  • Adjust lemon and salt to taste.
  • Chill for at least 2 hours to allow flavors to meld.
