Ingredients
  

  • 1 1/2 cups low-fat milk
  • 3 large eggs
  • 1 1/2 Tbsp real maple syrup
  • 1 tsp vanilla extract
  • 1 1/3 cups oat flour (use a scale to measure or scoop and level)
  • 3 Tbsp all-purpose flour
  • 1/4 tsp salt
  • 2 Tbsp melted butter
  • Avocado oil or olive oil cooking spray

Method
 

  1. In a large mixing bowl, whisk together the low-fat milk, large eggs, maple syrup, and vanilla extract until fully combined.
  2. In a separate bowl, combine the oat flour, all-purpose flour, and salt. Stir well to ensure the dry ingredients are evenly mixed.
  3. Gradually add the dry mixture to the wet mixture, whisking continuously until the batter is smooth. Then, stir in the melted butter until fully incorporated.
  4. Preheat a non-stick skillet over medium heat. Lightly coat the skillet with avocado oil or olive oil cooking spray.
  5. Pour about 1/4 cup of batter onto the skillet, swirling it around to form a thin layer. Cook for about 1-2 minutes, or until the edges start to lift and the bottom is lightly golden. Flip the crepe and cook for another minute on the other side. Remove from the skillet and repeat with the remaining batter.
  6. Fill the crepes with your favorite toppings or fillings, fold them over, and enjoy your Healthy Oat Crepes warm!

Notes

  • Cooked crepes can be stored in the refrigerator for up to 3 days or frozen for up to a month.
  • Warm them in a skillet or microwave before serving.
