Ingredients
  

  • 2 units eggs
  • 1 cup peanut butter
  • 1 cup pure maple syrup
  • 1 tsp vanilla extract (optional)
  • 1 cup rolled oats
  • 1 tsp baking soda
  • 1/2 tsp ground cinnamon (optional)
  • 1/2 tsp sea salt
  • 1 cup chocolate chips (optional)

Method
 

  1. Preheat your oven to 350°F (175°C) to ensure even baking.
  2. Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal.
  3. In a large mixing bowl, whisk together the eggs, peanut butter, pure maple syrup, and vanilla extract (if using) until smooth.
  4. In another bowl, mix the rolled oats, baking soda, ground cinnamon (if using), and sea salt until well blended.
  5. Gradually add the dry mixture to the wet mixture, stirring until just combined. Fold in chocolate chips if desired.
  6. Pour the batter into the prepared baking pan, smoothing it out evenly.
  7. Bake in the preheated oven for 20-25 minutes, until golden brown and a toothpick comes out clean.
  8. Allow to cool in the pan for 10 minutes, then lift out and cool completely on a wire rack before slicing.

Notes

  • Store leftovers in an airtight container at room temperature for up to 3 days.
  • For longer storage, freeze for up to 3 months.
  • Microwave for 10-15 seconds to rewarm before enjoying.
