- In a medium bowl, add 5 tablespoons (30 g) vanilla protein powder, 1 tablespoon (6 g) coconut flour, and a pinch of sea salt.
- Whisk the dry ingredients until evenly combined and any clumps are broken up.
- Add 2 tablespoons + 2 teaspoons unsweetened applesauce. Add 1 teaspoon unsweetened vanilla almond milk (optional but recommended) and 1/4 teaspoon butter extract (optional but recommended).
- Stir with a spoon or spatula until the mixture is moist, cohesive, and slightly fluffy, making sure there are no dry pockets of powder.
- Fold in 1/2 tablespoon dairy-free mini chocolate chips until evenly distributed.
- Refrigerate for 10 to 15 minutes to firm up if desired, or enjoy immediately.
