Method
- Heat a frying pan over low heat and add the butter until melted.
- Add the broccoli and baby spinach to the pan and cook briefly, about 1–2 minutes, until the spinach wilts and the broccoli is slightly tender.
- Crack the eggs directly into the pan over the vegetables and season with salt and pepper.
- Gently scramble the eggs, folding them over the vegetables and flipping or stirring 2–3 times, until cooked through but still soft.
- Remove from heat and serve immediately.
Notes
- Use low heat to avoid browning the eggs or spinach.
- Adjust salt and pepper to taste.
