Instructions
Step 1: Begin by peeling the Russet potatoes. After peeling, chop them into bite-sized cubes. Aim for uniform pieces to ensure even cooking.
Step 2: Once chopped, rinse the potatoes under cold water to remove excess starch. Soak the potatoes in cold water for about 10 minutes, then drain and pat them dry.
Step 3: In a large skillet, heat 2 tablespoons of canola oil over medium-high heat until hot.
Step 4: Add the chopped potatoes to the hot skillet. Season with salt, pepper, garlic powder, and smoked paprika. Cook for about 10–15 minutes, stirring occasionally until crispy and golden.
Step 5: Once the potatoes are nearly cooked, add the chopped red bell pepper and sweet Vidalia onion. Stir well and cook for an additional 5-7 minutes.
