Ingredients

Potatoes

  • 2 large Russet Potatoes, peeled and chopped

Oil

  • 4 tablespoons Canola Oil, divided

Vegetables

  • ½ cup Red Bell Pepper, chopped
  • ¼ cup Sweet Vidalia Onion, chopped

Spices

  • ½ teaspoon Garlic Powder
  • ¼ teaspoon Smoked Paprika
  • Salt and Pepper to taste
  • Green Onion, chopped, to taste (optional)

Instructions

  • Step 1: Begin by peeling the Russet potatoes. After peeling, chop them into bite-sized cubes. Aim for uniform pieces to ensure even cooking.
  • Step 2: Once chopped, rinse the potatoes under cold water to remove excess starch. Soak the potatoes in cold water for about 10 minutes, then drain and pat them dry.
  • Step 3: In a large skillet, heat 2 tablespoons of canola oil over medium-high heat until hot.
  • Step 4: Add the chopped potatoes to the hot skillet. Season with salt, pepper, garlic powder, and smoked paprika. Cook for about 10–15 minutes, stirring occasionally until crispy and golden.
  • Step 5: Once the potatoes are nearly cooked, add the chopped red bell pepper and sweet Vidalia onion. Stir well and cook for an additional 5-7 minutes.
  • Step 6: Taste the home fries and adjust the seasoning as necessary. Garnish with chopped green onions if desired.
  • Step 7: Remove from heat and transfer to a serving plate. Serve hot alongside your favorite breakfast items.

Notes

For extra crispy potatoes, ensure to drain and dry them thoroughly after soaking. Feel free to experiment with spices!
