Homemade Egg Noodles

Ingredients
  

  • 2 cups all-purpose flour
  • 1.75 teaspoons salt
  • 3 large egg yolks
  • 1 large egg
  • 5 tablespoons water

Method
 

  1. In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the egg yolks, the whole egg, and 5 tablespoons of water. Use a fork to mix the ingredients together until a rough dough begins to form.
  2. Transfer the dough to a lightly floured surface. Knead the dough for about 5-7 minutes until smooth and elastic. If too dry, add more water, one tablespoon at a time. Wrap in plastic wrap and let rest for at least 30 minutes.
  3. After resting, divide the dough into two or four pieces. Roll out one piece to about 1/8 inch thick on a floured surface, dusting as needed.
  4. Use a knife or pasta cutter to slice the rolled dough into noodle shapes. Dust cut noodles with flour to prevent sticking.
  5. Bring a large pot of salted water to a boil. Add noodles and cook for about 3-5 minutes or until they float. Drain and toss with your favorite sauce.

Notes

  • Fresh noodles can be kept in the refrigerator for up to 2 days in an airtight container.
  • For longer storage, freeze noodles on a baking sheet before transferring to a bag; they last up to 2 months.
  • Cook frozen noodles directly from the freezer for best results.
