  • 1 pound Salmon, skin and bones removed
  • 1 cup Breadcrumbs, divided
  • 1 medium Yellow onion, peeled and diced
  • 2 tablespoons Mayonnaise
  • 2 teaspoons Fresh lemon juice
  • 2 teaspoons Fresh parsley, chopped (optional)
  • 1 teaspoon Dijon mustard
  • ½ teaspoon Salt
  • ¼ teaspoon Pepper
  • teaspoon Cayenne pepper

Instructions

  • Step 1: Finely chop the salmon using a sharp knife or pulse it in a food processor until roughly minced, maintaining some texture.
  • Step 2: In a large mixing bowl, combine the chopped salmon with ¾ cup of breadcrumbs, diced onion, mayonnaise, lemon juice, parsley, Dijon mustard, salt, pepper, and cayenne pepper. Mix gently until well incorporated.
  • Step 3: Divide the mixture into four equal portions and shape each into a burger patty. If too wet, sprinkle in remaining breadcrumbs.
  • Step 4: Chill the patties on a plate or baking sheet lined with parchment paper for at least 30 minutes to firm up.
  • Step 5: Heat vegetable oil in a skillet over medium heat. Add the chilled patties and cook for 4-5 minutes on each side until golden brown and cooked through.
  • Step 6: Remove from skillet, let rest for a minute, and serve on a bun or with a salad. Squeeze additional lemon juice on top if desired.

Ensure your salmon is fresh for the best flavor. For a gluten-free option, substitute breadcrumbs with gluten-free ones. Adjust cayenne pepper to your spice tolerance.
