In a medium mixing bowl, add 1 cup of mayonnaise. This creamy base will set the stage for all the delicious flavors to come.
Stir in ½ cup of sweet and/or dill pickle relish. Make sure it’s lightly drained but still has a bit of liquid to keep the sauce moist.
Add 1 tablespoon of grated onion, 1 tablespoon of chopped brined capers, and ½ teaspoon of Dijon mustard. These ingredients will enhance the tartar sauce with layers of flavor.
Chop 1 to 1 tablespoon of fresh dill and add it to the mixture. Then squeeze in 1 to 3 teaspoons of freshly squeezed lemon juice, adjusting to your taste preference.
If desired, stir in 1 teaspoon of granulated sugar to balance the flavors. Season with kosher salt and freshly ground black pepper to taste.
Using a whisk or spoon, mix all the ingredients together until well combined and creamy. Taste and adjust seasoning as necessary.
