  • 4 5-ounce salmon fillets Fresh or thawed
  • 1 teaspoon olive oil
  • 2 cloves minced garlic
  • 1 tablespoon honey
  • ½ cup balsamic vinegar
  • 4 teaspoons Dijon mustard
  • to taste salt and pepper
  • 1 tablespoon chopped fresh oregano for garnish

Instructions
  1. In a small mixing bowl, combine the minced garlic, honey, balsamic vinegar, and Dijon mustard. Whisk together until well blended.
  2. Pat the salmon fillets dry with a paper towel, then season both sides with salt and pepper.
  3. In a non-stick skillet, heat the olive oil over medium-high heat.
  4. Place the salmon fillets in the skillet, skin-side down. Cook for about 4-5 minutes.
  5. Gently flip the salmon fillets over and pour the glaze over them. Cook for another 3-4 minutes.
  6. Once the salmon is cooked through, transfer to a serving dish, drizzle remaining glaze over the top, and garnish with freshly chopped oregano.
