Carrots

  • 8 medium carrots, peeled and cut into uniform pieces
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ¼ cup honey

Fresh parsley, finely chopped

Instructions

  • Step 1: Preheat your oven to 400°F (200°C). Wash and peel your carrots, then cut them into uniform pieces, about 1-inch long.
  • Step 2: In a large mixing bowl, combine the olive oil, garlic powder, salt, and pepper. Whisk until well combined.
  • Step 3: Pour the honey into the bowl with the olive oil mixture and stir until fully incorporated.
  • Step 4: Add the carrot pieces to the bowl and toss gently in the honey-garlic mixture until well-coated.
  • Step 5: Spread the coated carrots in a single layer on a baking sheet lined with parchment paper.
  • Step 6: Roast the carrots for 25-30 minutes, tossing halfway through for even cooking.
  • Step 7: Once roasted, transfer the carrots to a serving dish and sprinkle with freshly chopped parsley. Serve warm.

For extra flavor, consider adding crushed red pepper flakes or using fresh minced garlic instead of garlic powder.
