Ingredients

  • 1.5 pound chicken breasts chopped into bite-size pieces
  • 1/4 cup cornstarch
  • 1/4 teaspoon red pepper flakes plus garlic powder, salt, and pepper (each 1/4 teaspoon)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons butter
  • 5-6 cloves garlic crushed or minced
  • 2 tablespoons olive oil
  • 1/4 cup honey
  • 2 tablespoons lemon juice
  • 2 tablespoons soy sauce
  • 1 tablespoon hot sauce or sriracha

Equipment

  • cast iron pan

Method

  1. Pat the chicken pieces dry with paper towels.
  2. In a large bowl, toss the chicken with the cornstarch, red pepper flakes, garlic powder, salt, and pepper until evenly coated.
  3. Heat 2 tablespoons butter in a large heavy-duty or cast iron pan over medium-high heat.
  4. Add the chicken to the pan and cook for 3–4 minutes per side, until cooked through and lightly browned.
  5. Meanwhile, in a small bowl whisk together the minced garlic, olive oil, honey, lemon juice, soy sauce, and hot sauce.
  6. Pour the sauce over the cooked chicken and continue to cook for 4–5 minutes, stirring occasionally, until the sauce thickens and coats the chicken; cook longer for a stickier sauce.
  7. Serve the honey garlic chicken bites over rice, pasta, or with vegetables.
