Instructions:
- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, combine the chicken wings and all the dry ingredients: all-purpose flour, cornstarch, baking powder, kosher salt, black pepper, paprika, garlic powder, and onion powder. Toss the wings in the mixture until they are evenly coated.
- Line a baking sheet with aluminum foil and place a wire rack on top. Arrange the coated wings in a single layer on the wire rack.
- Spray the wings lightly with cooking spray or drizzle a little oil over them. Bake for 40-45 minutes, flipping halfway through.
- Once baked, remove wings from the oven and place them in a mixing bowl. Pour the hot sauce over the wings and toss until well-coated.
- Transfer the sauced wings to a serving platter and serve with celery sticks and your favorite dipping sauce.

- For gluten-free wings, use gluten-free all-purpose flour.
