Ingredients

For the Caramel:
  • 1 cup sugar
  • 1 cup water
For the Custard:
  • 8 ounces cream cheese softened
  • 5 large eggs
  • 1 14-ounce can sweetened condensed milk
  • 1 12-ounce can evaporated milk
  • 2 teaspoons vanilla extract

Equipment

  • Medium Saucepan
  • Blender or food processor
  • Large mixing bowl
  • 9-inch round baking dish
  • Aluminum Foil

Method

How to Make Flan:
  1. Step 1: Make the Caramel - In a medium saucepan, combine the sugar and water. Cook over medium heat, stirring gently until the sugar dissolves. Allow to boil without stirring until golden amber, about 10 minutes. Carefully pour into a 9-inch round baking dish.
  2. Step 2: Prepare the Custard - In a blender or food processor, add the softened cream cheese, eggs, sweetened condensed milk, evaporated milk, and vanilla extract. Blend until smooth and creamy.
  3. Step 3: Combine and Pour - Pour the custard mixture over the caramel in the baking dish, tapping gently to release air bubbles.
  4. Step 4: Bake in a Water Bath - Preheat the oven to 350°F (175°C). Place the flan dish in a larger baking pan and fill with hot water halfway up the sides. Cover with aluminum foil and bake for 50-60 minutes until set.
  5. Step 5: Cool and Refrigerate - Remove from the oven and water bath. Let cool for 30 minutes, then refrigerate for at least 4 hours, preferably overnight.
  6. Step 6: Serve - Run a knife around the edges, invert onto a serving plate, and enjoy!

Notes

  • For a warm spice flavor, add a pinch of ground cinnamon to the custard.
  • Substitute part of the evaporated milk with coconut milk for a tropical twist.
  • Top with fresh berries for a colorful presentation.
