Instructions
Step 1: Season the corned beef brisket with the spices from the spice packet.
Step 2: Set the Instant Pot to the sauté function. Add oil and sauté the chopped onion until translucent, about 3-4 minutes. Add minced garlic and sauté for another minute.
Step 3: Pour in the beef broth and Guinness Extra Stout, scraping the bottom of the pot to deglaze.
Step 4: Place the seasoned corned beef brisket into the pot, fat side up.
Step 5: Secure the lid and cook on high pressure for 90 minutes. Let the pressure release naturally for 15 minutes, then switch to quick release.
Step 6: Add the small red potatoes and baby carrots. Nestle the cabbage wedges on top.
Step 7: Secure the lid again and cook on high pressure for an additional 10 minutes. Perform a quick release.
Step 8: Open the lid, remove the brisket and vegetables, let the brisket rest, then slice and serve with the vegetables and cooking liquid.
