Ingredients
  

  • 10 ounces cauliflower florets
  • 10 ounces broccoli florets
  • 1 large red bell pepper seeds removed and cut into 2-inch pieces
  • 2 teaspoons olive oil
  • 1 teaspoon kosher salt
  • to taste black pepper
  • 1/4 cup breadcrumbs (plain, seasoned, or gluten-free)
  • 1/4 cup chicken broth
  • 1 large egg
  • 1 teaspoon fennel seeds
  • 1/2 teaspoon sweet paprika
  • 1/2 teaspoon crushed red pepper
  • 1 pound 93% lean ground turkey

Method
 

  1. Preheat your oven to 400°F (200°C). This ensures that your meatballs and veggies will roast perfectly.
  2. On a large sheet pan, toss the cauliflower florets, broccoli florets, and red bell pepper pieces with olive oil, kosher salt, and black pepper. Make sure the vegetables are evenly coated.
  3. In a large mixing bowl, combine the ground turkey, breadcrumbs, chicken broth, egg, fennel seeds, sweet paprika, and crushed red pepper. Season with additional salt and black pepper to taste. Mix until just combined; be careful not to overmix.
  4. With your hands, form the turkey mixture into meatballs, about 1.5 inches in diameter. You should get approximately 12 to 14 meatballs.
  5. Nestle the meatballs among the seasoned vegetables on the sheet pan. Make sure there’s some space between each meatball for even cooking.
  6. Place the sheet pan in the preheated oven and roast for 25-30 minutes, or until the meatballs are cooked through and the vegetables are tender and slightly caramelized.
