  • 2 large boneless skinless chicken breasts
  • 6 slices bacon, diced
  • 4 ounces cream cheese, at room temperature
  • 3 tablespoons pickled jalapenos, diced
  • 1.5 cups mozzarella cheese, shredded, divided
  • 0.25 teaspoon garlic powder
  • Salt and pepper, to taste
  • Pickled jalapeno slices, for garnish

Instructions

  • Step 1: Preheat your oven to 375°F (190°C).
  • Step 2: In a skillet over medium heat, cook the diced bacon until crispy, about 5-7 minutes. Remove with a slotted spoon and set aside.
  • Step 3: In a large mixing bowl, combine cream cheese, 1 cup of mozzarella cheese, diced jalapenos, garlic powder, salt, and pepper. Mix until well incorporated.
  • Step 4: Gently fold the crispy bacon into the cream cheese mixture.
  • Step 5: Lay the chicken breasts on a cutting board and slice each horizontally to create a pocket.
  • Step 6: Stuff each chicken breast with the cream cheese mixture and secure with toothpicks if needed.
  • Step 7: Place the stuffed chicken in a baking dish, sprinkle with salt and pepper, and bake for 25-30 minutes until cooked through. Add remaining mozzarella cheese in the last few minutes of baking.
  • Step 8: Let the chicken rest before serving. Garnish with pickled jalapeno slices.

Notes

For a spicier filling, add more jalapenos or use jalapeno cream cheese. Ensure chicken is cold for easier slicing.
