Ingredients
  

  • 1 1/2 cups rolled oats gluten-free if desired
  • 1/2 cup rice crispies cereal
  • 3 tablespoons cornmeal
  • 1 pinch salt
  • 1/4 teaspoon baking soda
  • 1/4 cup honey
  • 2 tablespoons canola oil (or coconut oil)
  • 3/4 teaspoon vanilla extract
  • 1/2 tablespoon brown sugar

Method
 

  1. Preheat your oven to 350°F (175°C). Line your baking pan with parchment paper, leaving some overhang on the sides.
  2. In a large mixing bowl, combine the rolled oats, rice crispies, cornmeal, salt, and baking soda. Stir until well mixed.
  3. In a separate bowl, whisk together the honey, canola oil (or coconut oil), vanilla extract, and brown sugar until smooth.
  4. Pour the wet mixture into the bowl with the dry ingredients. Use a spatula to fold everything together until coated.
  5. Transfer the mixture to your prepared baking pan. Press down firmly into an even layer.
  6. Bake for about 20-25 minutes, or until the edges are golden brown. The center may look slightly soft.
  7. Let the pan cool for 10 minutes, then lift the bars out using the parchment and allow to cool completely before cutting.

Notes

  • Store bars in an airtight container for up to a week.
  • Wrap individual bars in plastic wrap and freeze for up to three months.
  • Reheat in the microwave for 10-15 seconds for a warm treat.
