Instructions
Step 1: Preheat your oven to 400°F (200°C). If using a whole head of cauliflower, remove leaves and stem, then chop into florets. Steam until tender, about 5-7 minutes. If using riced cauliflower, skip steaming.
Step 2: Let the cauliflower cool, then place in a clean kitchen towel or cheesecloth and squeeze out excess moisture.
Step 3: Transfer drained cauliflower to a mixing bowl. Add mozzarella, Parmesan, eggs, garlic, basil, parsley, salt, and pepper. Mix until well combined.
Step 4: Line a baking sheet with parchment paper. Shape the mixture into two large or four smaller bread-like shapes, about ½ inch thick.
Step 5: Bake for 25-30 minutes until golden brown and firm to the touch.
Step 6: Once baked, let cool slightly. For each sandwich, top one piece of cauliflower bread with two slices of cheddar cheese and place another piece on top.
Step 7: In a skillet over medium heat, melt butter. Grill sandwiches for 3-4 minutes on each side until cheese melts and bread is crispy.
Step 8: Remove from skillet, let cool for a minute, cut in half, and serve.
Notes
Make sure to squeeze out as much water from the cauliflower as possible for a crispy texture. You can add spices like paprika for extra flavor.
