  • ¼ cup sugar-free peanut butter
  • cup Lily’s dark chocolate chips
  • 2 tablespoons powdered erythritol
  • 1 tablespoon coconut oil, melted
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • to taste sea salt for garnish optional

Instructions

  • Step 1: Prepare your workspace by gathering all your ingredients and tools.
  • Step 2: In a mixing bowl, combine the fine-ground almond flour and powdered erythritol. Mix well.
  • Step 3: In a separate bowl, mix the sugar-free peanut butter, melted coconut oil, vanilla extract, and salt until creamy.
  • Step 4: Slowly add the wet mixture into the dry ingredients, folding them together with a spatula.
  • Step 5: Gently fold in the Lily’s dark chocolate chips.
  • Step 6: Scoop a tablespoon of the dough and roll it into small balls. Place on the prepared baking tray.
  • Step 7: Sprinkle a tiny pinch of sea salt on top of each cookie dough bite.
  • Step 8: Refrigerate for about 30 minutes to set, then enjoy!

Notes

For a smoother texture, sift the almond flour before using. You can substitute peanut butter with other nut butters if desired.
