Ingredients
  

  • 1 large cauliflower (400g / 14 oz) florets
  • ½ cup tahini (60g)
  • 3 tablespoons extra virgin olive oil (divided)
  • 8 tablespoons water (or to desired thinness)
  • 1 whole lemon (juice + zest)
  • 1 clove garlic (minced)
  • ½ teaspoon flaked sea salt (or to taste)
  • 1 pinch paprika

Method
 

  1. Begin by washing and cutting the cauliflower into florets. Steam the florets until they are tender, about 8-10 minutes.
  2. In a food processor, combine the steamed cauliflower, tahini, 2 tablespoons of olive oil, lemon juice, lemon zest, minced garlic, and salt. Blend until smooth.
  3. Add water, one tablespoon at a time, blending after each addition until you reach your desired consistency.
  4. Taste your hummus and adjust the seasoning if necessary.
  5. Transfer the hummus to a serving bowl. Drizzle with the remaining tablespoon of olive oil and sprinkle a pinch of paprika on top for presentation.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 5 days.
  • Freeze hummus for up to 3 months in a freezer-safe container.
  • Adjust the water gradually to reach your desired consistency.
