Ingredients
  

  • 1/2 cup Peanut Butter natural, unsweetened
  • 2 tablespoons Butter unsalted
  • 4 tablespoons Powdered Swerve Sweetener zero-calorie
  • 1/2 teaspoon Vanilla Extract unsweetened
  • 1 1/4 cups Coconut Flakes unsweetened
  • pinch Salt

Method
 

  1. Start by gathering all your ingredients on the countertop.
  2. In a medium mixing bowl, combine the peanut butter and butter. Microwave for about 30 seconds until melted and well blended.
  3. Add the powdered Swerve sweetener, vanilla extract, and a pinch of salt. Stir until smooth.
  4. Slowly fold in the unsweetened coconut flakes until evenly coated.
  5. Scoop out portions and form into cookie shapes. Place on a baking sheet lined with parchment paper.
  6. Refrigerate for at least 30 minutes to firm up.
  7. Once chilled, enjoy immediately or store for later!
